I love pancakes in the morning because it puts me in a good me and keeps me full throughout the day. This is a simple and quick recipe for when your on the go or entertaining a friend. For this recipe you will need:

Preparation: 5 minutes                                     Cooking time: 15 minutes

Ingredients:

  • 2 cups of self raising flour
  • 1 1/4 (flat ) teaspoon of baking powder
  • 4 tablespoons of sugar
  • 1/2 or 2/3 cup of  milk (depending on the consistency)

For pancakes:

Add the flour into a large mixing bowl along with the baking powder and sugar. combined the ingredients while you gradually add the milk into the bowl.

Once mixed thoroughly and all the ingredients are well combined they are ready to be cooked.

For the sauce:

  • 2 large handfulls of frozen strawberries
  • 2 1/2 tablespoons of brown sugar
  • 1/4 cup of water

In a saucepan add the frozen strawberries, sugar and water. Stir in order to dissolve the sugar then let it simmer for 5-7 minutes.

Once the strawberries have softened place into a blender. Blend the sauce until you get a smooth consistency.

When you get a smooth consistency place back onto the saucepan and let it simmer, add half a tea of corn syrup and stir until the consistency thickens.
