During cold winter mornings in Kenya i really struggle getting up early so i can get to the gym. I have no motivation and always want to stay in bed for 5 more minutes.My 5 more minutes becomes 10 more minutes then 30 more minutes and before you know it, its 9am.
I want to look for something that will keep me on track and keep me going through the cold season and whats better than protein bars to kick start my morning and satisfy my sweet tooth so i don’t get any cravings though out the day.
- 1 cup sugar
- 2 eggs
- 2/4 flour
- 1/4 cup vanilla protein
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1 1/4 cup crushed pineapple or diced pineapple
- 1/2 cup butter
- 1/4 cup shredded coconut
- icing sugar
- Shredded coconut
Cooking time:30 minutes Prepping time: 20 minutes
Preheat oven at 150 degrees celsius.
In a large mixing bowl mix butter until soft or it turns into a light yellow paste.
Add in the eggs, sugar, salt and baking powder. Mix until well combined.
Gradually add the flour, coconut and protein powder into the wet mixture. Once well combined add the pineapple. Fold the pineapple into the mixture.
Grease a 9 by 9 baking tray and pour the mixture.
Bake at 170 degree celsius for 20 minutes.
