DOUBLE Breakfast shake!

The end of the summer break is around the corner and what better way to get your life back on track than with healthy nutritious smoothies that are both sweet and high in protein. It will suppress any sugar cravings you will get throughout the day as well as keep you energetic and alert.

Perfect for any day of the time. I’m completely  obsessed with chocolate smoothies because they are healthy and keep me from having too many chocolatey snacks but I often get bored of having the same chocolate shake from time to time. In this recipe I decided to mix two of my favourite smoothies into one.

Preparation Time:   10   minutes                                  Cooking Time: 10 minutes

(Serves 2 people)

Ingredients:

For Chocolate shake:

  • 3 tbs Cashew nuts or peanuts
  • 1/2 cup Almond milk or any milk of your choice
  • 1/2 cup water
  • 1 tsp Vanilla essence
  • 2 tbs Cacao powder
  • 2 Banana
  • 1 date
  • 1 scoop protein powder

Vanilla shake:

  • 2 bananas
  • 2 tbs cashew or peanuts
  • 1 date
  • 1 tsp vanilla essence
  • 1/2 cup water
  • 1 scoop protein powder
  • 1/2 cup Almond milk or any milk of your choice

 

Blend away!

Ombré Pancakes

IMG_6622.pngSince i got back home its been a while since i had fluffy pancakes which I absolutely LOVE!!! They are so fluffy, soft but keeps you fuller for a longer time.

They can be made in different ways but the simpler the better.  With just a few ingredients these pancakes are way to make.

Preparation:  15 minutes                                              Cooking Time:30 minutes

Ingredients:

  • 1  cups self raising flour
  • 2tbs coconut sugar
  • 3/4 cups almond milk
  • 1/4 tsp salt
  • 1 tbs baking powder
  • 1 tsp vanilla essence
  • Cocoa powder

To make this:

  1. In a large bowl add the flour, baking powder, salt and sugar.
  2. Gradually add the milk to the mixture.
  3. Once the pancake mixture is well combined, divide the mixture into 3 bowls.
  4. Bowl 1: Add 1 teaspoon of cocoa into the pancake mixture.
  5. Bowl 2: Add 1/2 teaspoon of cocoa into the pancake mixture.
  6. Bowl 3: Leave as it is.
  7. Cook on medium heat until air bubbles form on one side of the pancake and its ready to flip.

Homemade Bruschetta

It took me ages trying to figure out what I could do for my dad for fathers day. I bought him all the presents I could think of and its time I got creative.Quick and easy father’s day treat for breakfast or lunch. Both simple and satisfying at the same time.

To make this you will simply need: (For 1-2 people)

Prep time: 5 minutes                                                                        Cooking time: 10-15 minutes

  • Cherry tomatoes one packet (Cut into halves)
  • 1/2 an Avocado
  • 1/2 teaspoon parsley
  •  1/4 teaspoon black pepper
  • 1 teaspoon of olive oil
  • 1/4 teaspoon of salt
  • A long baguette
  • 3 tablespoon of Light soy sauce

For Baguette

  • 1 tablespoon of olive oil
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt

Instructions:

As the pan heats up place half the baguette in the oven to heat up and get crispy on 180 degrees celsius for 5 minutes. Pour the olive oil on to the pan, once hot add cherry tomatoes and stir the tomatoes. Let it cook for 3- 5 minutes until the skin of the cherry tomatoes begins to peel. Add salt, black pepper and soy sauce. Mix the sauce and spices for a minute or two and its ready to be served.

Alternative Method:

Preheat the oven for 5 minutes as you prep the ingredients on 180 degrees celsius. In a large bowl add half cut cherry tomatoes, salt, black pepper, soy sauce, parsley and olive oil into the bowl and toss until well combined. Pour into a baking tray and place in the oven or 10 minutes.

For the baguette: cut the baguette in half and sprinkle olive oil, salt and pepper. Place on a tray lined with foil and place in the oven for 5-7 minutes until golden brown.

Death By Chocolate Brownies

You can never go wrong with chocolate brownies at a party or for desert. I have perfected this recipe so many times and it never gets too old or too sweet.  A couple of my friends came over over for a sleepover and no one could keep their hands off these mouth watering gooey brownies and trust me they are irresistible.

Ingredients:

  • 300gs dark chocolate (melted)
  • 225gs unsalted butter/ margarine
  • 200gs chocolate chunks
  • 175gs of extra chocolate
  • 3 eggs
  • 200gs of light brown sugar
  • 75gs self raising flour

How to make it:

  1. Preheat oven to 180 ⁰C, gas mark 4. Grease and line the base and sides of a 20 cm square cake tin with baking parchment.
  2. Melt the chocolate and butter in a bowl over a pan of simmering water. Cool slightly.
  3. Whisk the eggs and sugar until thick and creamy, pour over the chocolate mixture and fold in.
  4. Sift in the flour and cocoa and fold in the extra chocolate. Pour into the prepared tin, making sure it goes right into the corners. Add any extra chocolate into the baking tray and  bake for 25-30 minutes. The top should be crusty with a slight wobble underneath.
  5. Cool completely in the tin (can refrigerate overnight which aids cutting) and then cut into squares or triangles.

Pina Colada Protein bars

zDuring cold winter mornings in Kenya i really struggle getting up early so i can get to the gym. I have no motivation and always want to stay in bed for 5 more minutes.My 5 more minutes becomes 10 more minutes then 30 more minutes and before you know it, its 9am.

I want to look for something that will keep me on track and keep me going through the cold season and whats better than protein bars to kick start my morning and satisfy my sweet tooth so i don’t get any cravings though out the day.

Ingredients:

  • 1 cup sugar
  • 2 eggs
  • 2/4 flour
  • 1/4 cup vanilla protein
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1 1/4 cup crushed pineapple or diced pineapple
  • 1/2 cup butter
  • 1/4 cup shredded coconut

To Garnish:

  • icing sugar
  • Shredded coconut

Cooking time:30 minutes                                           Prepping time: 20 minutes

Prepare:

Preheat oven at 150 degrees celsius.

In a large mixing bowl mix butter until soft or it turns into a light yellow paste.

Add in the eggs, sugar, salt and baking powder. Mix until well combined.

Gradually add the flour, coconut and protein powder into the wet mixture. Once well combined add the pineapple. Fold the pineapple into the mixture.

Grease a 9 by 9 baking tray and pour the mixture.

Bake at 170 degree celsius for 20 minutes.

 

Cinnamon Oats

Breakfast can make your day good or bad by what you choose to eat. For all those cold winter morning that you don’t want to leave the house but sit in your room on the couch with warm furry blanket and big bowl of oats. A big bowl of oats keeps you warm and start your day perfectly.

 

Preparation: 2 minutes                                            Cooking Time: 5 minutes

Ingredients:

  • 40gs of oats
  • 2 table spoons of agave nectar
  • 1/2 cup of almond milk
  • 1/2 teaspoon of cinnamon
  • 1/4 cup of water

Prepare:

In a saucepan pour in all the ingredients and slowly stir on medium heat. Leave to boil for 3- 5  minutes.

Once the porridge comes to a boil, its ready.

Pour it into a large bowl and enjoy.

Roasted Potatoes

Perfect for a Sunday barbecue with the family or a filling dinner with enough leftovers for the next day.

Being born in Kenya there are many barbecues and evening spend surrounded by a nice warm fire. The company is always amazing but me being the host like many of you, i constantly worry about  whether the food will be healthier enough or tasty enough.

ingredients:

Cooking time:45-60 minutes                                           Prepping time: 10 minutes

  • 5 washed potatoes (use a clean sponge and don’t remove the skin. It has nutritional value.)
  • 1  heaping teaspoon of tumeric
  • 1/2 a teaspoon of salt
  • 1 teaspoon of thyne
  • 1/2 teaspoon of  paprika or cayenne pepper
  • 1/4 teaspoon of black pepper
  •  2 tablespoons of olive oil

Instructions:

Preheat the oven at 150 degrees celsius.Carefully wash the potatoes to ensure there isn’t any dirt left on them. Dice the potatoes into estimated equal sized wedges to ensure they don’t over cook or undercook.Once diced place all the ingredients into a large bowl and mix properly. Spread onto a baking tray and place into the oven at 160 degrees celsius for 45 to 60 minutes depending on the sizes of the wedges.
